Cast Iron Grill

TAVA is a brick oven restaurant where the food is prepared and served in sizzling cast iron skillets (tava) out of open wood fire straight to your table.

Brick oven cooking is the tradition in Tavush region, and almost all the dishes in our menu are prepared using this method – from sizzling salads to delicious deserts.

The heavyweight cast iron skillet is an excellent vessel that absorbs the extreme heat of the open fire and transfers that irresistable fiery taste to the food.

We use natural and easily traceable ingredients, only free-range and pasture raised local meat, do our own butchering, make our sauces in-house, bake our own bread and take great pride in our everyday work since 2018.

Old & New Armenian ­Classics

Kchuch is the place for appreciating the slow-cooked, comforting and traditional food with old and new Armenian classic flavors, that has become a true staple of Dilijan, perfectly matching its slow and laid-back vibe since 2016.

Kchuch is translated as a clay pot, and the concept of cooking in clay pots, in local traditional woodfired brick oven lays in the basis of our restaurant. Clay vessel is a lively earthenware pot, which maintains the natural flavors of each food, preserves the juiciness and richness of every ingredient used, also adding earthy umami flavor to your dish. Clay pots were chosen as the most suitable vessels for brick oven slow cooking, and any food cooked for hours inside a clay pot has a rich and well-balanced taste. Moreover, cooking in clay pots is an old Armenian tradition, which is partly forgotten, and very rare to find in everyday life. Nowadays clay pots are mainly used for serving the food, while we aim to revive the tradition of cooking in these vessels over the open fire.

Cooking in clay pots is a time-consuming process, and that is why we prepare a limited amount of clay pot dishes every day. These dishes are especially in-demand during the weekends. Dear friends, please do not get disappointed if your chosen dish is not available. We love and care for our guests, but at the same time we do our best to be sustainable, keep the food fresh and not to create any food waste.

From the moment of your order, it takes at least 30-40 minutes to serve the food in piping hot clay pots. But the wait is worth it!
